I thought I’d chime in with a little foodie blog here. This summer I’ve committed to trying to eat as many fresh fruits and vegetables as possible. Sure, it is easy to default to fast food (which I am not denying is tasty), but the summertime is all about the fresh foods out there, especially in the Treasure Valley.
Enter in: the Summer of Salads. My goal is to find a new salad to make once a week, or more! What have I discovered? That fruits in salad are a flavor twist! Try a berry or even apples or pears to top of some greens. The flavors are crisp and good! The other thing I’ve been enjoying in my salads has been fresh herbs! basil, mint, Italian parsley are all great additions to salad greens. Lastly, you don’t even need lettuce! Try a salad with just cucumbers, tomatoes, onion, and herbs!
The best thing about salads is that you can literally start with whatever you have in the fridge and go from there. My favorite salad toppings: artichoke hearts, olives, pepper, feta/blue cheese, pepperocinis, and beets!
